Easy packable lunches

I would like to find some easily prepared, healthy packable lunches that are either cold or microwaveable. I'm horrible at planning ahead for lunches which usually results in a Marie Callender's Pot Pie from the freezer. That's not really conducive to my current health goals. Any suggestions?

From time to time I buy Lean Cuisine frozen meals at Target and they’re not bad at all!

Right before Covid hit I was having the same dilemma. I ended up buying a couple of cookbooks for salads and one bowl meals that have some clean recipes. I haven't really used them yet but it was fun to look through them for ideas.

Our local chain grocery store, HEB, has a very large ready to eat meal section where there are several microwavable options. Every store, there are several in Austin, has this option. Are there any stores in your area that have something like that?

Julie Joyce part of my problem is I'm pretty picky when it comes to ready to eat stuff, but that is a good idea and I'll have to look. We have King Soopers, Target, and Walmart in our area for stuff like that.

I love the bagged salad kits if you like that sort of thing. I don't really love the ones with cabbage but there are a few out there with other options, like Caesar. I usually grab a package of sliced turkey to add, and it lasts me like two lunches. Or I get a tub of prepared tuna and some gluten free crackers. Easy to keep at work for those moments when the pot pie is calling you.

FullGreen makes awesome cauliflower rice microwaveable pouches! Like to use this as a base and add in a protein and more veggies!
