Children's Book Illustrator + Publisher

I assume this question may go unanswered, but I'll put it out there. I am in the process of writing a children's book and unfortunately my illustrator had to bow out, so back to the drawing board. I've heard there are only 4-5 legit publishers out there, so I don't want to be scammed. Give me all your experience or suggestions for illustrators and publishers.
