Chef Daniel Mallahan and his staff are local rockstars building a real contender for our personal favorite and perhaps the best new restaurant in the last five years.
On Saturday we sat at the Chef's counter so we had a front-row view of the wood-burning fire and the loving final prep for every plate.
The local ingredients are out of this world from the lightly poached mussel escabeche, steamed manilla clams with best kale chip I've ever had, to the wagyu beef tartare in black garlic aioli in pickled shallots to the perfectly grilled steelhead from the Quinault nation with spot prawns in house made bisque.
Our meal was not just a home run, it was a *michelin-level Grandslam*. Rider is not cheap but I was prepared for the bill to be at least $100 higher than it was.
We were running behind for a show at the Paramount nearby but the staff got us in and out the door in a flash. One of the best meals ever and only 70min elapsed.
I wrote the above two weeks ago and we've been back twice. To the above recommendations, we also suggest the new Petrale Sole over risotto, the Caramelle Pasta, the fish and chips as well as the grilled steelhead. All are winners and we'll be back again soon.
