I have the "Ultimate Vegan Cookbook for your Instant Pot "- Definitely recommend as it has some delicious recipes in it- and many simple ones. It also does a good job of teaching you all the tips and tricks with instant pots.
Pork butt Juice of one orange, juice of one lime, 5 garlic cloves, I chopped shallot, one chopped onion, splash red wine vin or 3 oz lighter beer. Plus 3/4 cup stock or water. Salt/pepper and I like a teaspoon of cumin, paprika, pinch of cinnamon and 2 cloves. Cool max setting 2 hours. Will take Longer w pre and post pressurizing. Enjoy!! Sorta Cuban mojo pork.
A simple google search for any recipe and add instapot will take you down a rabbit hole of how creative humans can really be!! You can make almost anything! I highly suggest staying away from any fish dishes though. I haven’t found one that tastes good yet.
I feel ya, I recently got one too and it's a lil overwhelming and intimidating at first. Just have fun experimenting! Love pulled chicken for tortillas. It's so easy, just put in frozen or fresh chicken breast, random seasonings, think salsa, chicken stock, chili powder, cumin, etc. Pressure cook for 15-20 minutes on high, slow release for 10. Use 2 forks to shred the chicken. Portion on toasted tortillas and add your favorite toppings...sour cream, cilantro, sambal, cheese, etc.
