Summertime dinner ideas

I need some good summer dinner ideas for healthy eating without an oven or grill, only using the stovetop. I love using fresh seasonal ingredients. What's your favorite summer fare?

Liz Stella recommended a great cookbook called Every Day is Saturday that has some good one pot summertime recipes. I have liked a lot of the recipes so far.

So we like using our cast iron skillet on the stove top to cook seafood and all sorts of veggies ... even roast watermelon and pineapple in it

Last night we tried something new, our usual kale salad soaking in the cesear salad dressing to wilt it, then instead of grilling or cooking chicken to add we added canned chicken and it was so easy and yummy. We've also liked Orzo with sundried tomatoes and some sausage for hot days.

Are you opposed to using a microwave? If not, I recommend checking out Epicure. Epicure has a multipurpose steamer that can be used in the microwave and oven to cook foods with steam. I can roast a 3-4 pound chicken in 20 minutes. Rice in 15. Steam veggies in a couple of minutes. Meatloaf in 6-7 minutes. I like a recipe I found on Pinterest, you take a cubed chicken breast, brown it in a skillet with olive oil and garlic, remove it from the pan, add 1/2 cup of chicken broth or water and a peeled and cubed sweet potato and let it cook for 7-10 min with the lid on. Then you add in asparagus cut up into 1" pieces, sauté with the potatoes for a few min until bright green and then toss in your chicken and season with salt, pepper, and a little crushed red pepper. I love making zucchini boats (think pizza but on a zucchini). I start by slicing the zucchini in half, long ways, scoop out the seeds with a spoon, then bake for 10 mins at 400F. Load up the middle with tomato sauce, roasted veggies and sprinkle some grated Parmesan/ shredded mozzarella on top, then place in the oven for another 12-15 minutes until the cheese has melted!

This an easy one Store-bought chicken breast already grilled. Than add a cup of half grapes a bunch of thinly sliced celery stocks finally cubed apple some toasted pecans or raw to that added dressing Which is mayonnaise Greek yogurt and honey and a little bit of rice wine vinegar mix all that up together yummy

I like to buy the rotisserie chicken from Costco because there is so much you can do with it without turning your oven on. Great for chicken salad or buying a bagged salad and adding some of the chicken. I like the prepared bagged chopped salad our local HEB grocery store sells. Also good in pasta with some fresh sautéed veggies and a lemon vinaigrette.

I second HEB's & Central Market's roast chickens! I usually make some chicken salad with the leftovers.

My go to is a pita sandwich stuffed with fresh tomato salad. I mix together sliced grape tomatoes, chopped up cucumber, fresh mozzarella, fresh basil, green onions, salt, pepper, olive oil and a balsamic vinegar glaze. I also add some butter leaf lettuce to the pita for a fresh and flavorful dinner.

Pineapple Marinated Chicken Breast is easy, fast, cost convenient, fresh and super yummy 🤤🤤. You serve it over white rice or tortilla.

Noodle salads are a great refreshing dinner. I've been using a Vietnamese beef noodle recipe in Milk Street Tuesday Nights cookbook which also has a bounty of summer salad ideas.

Fresh tomatoes diced, onion, yellow bell peppers diced, cilantro, a bag of Trader Joe’s charred frozen corn, pepper and garlic to taste. Eat on its own or with seared chicken breasts

Get a grill pan (le crueset has a nice one) and you open yourself up to a lot of indoor cooking options. Grilled, stuffed calamari, vegetables, etc.
